APRICOT CHEESE PIE

Ingredients:

FOR TOPPING:

150g Dried Apricot

450g Water

2 Tbsp Sugar

2 Tbsp Apricot Glaze/Jam

FOR PIE CRUST:

400g Plain Flour

1 tsp Salt

1 Tbsp Sugar

250g Unsalted Butter

2-4 Tbsp Cold Water

FOR EGGWASH:

1 Egg

1 Tbsp Heavy Whipping Cream

FOR FILLING:

250g Cream Cheese

220g Heavy Whipping Cream

30g Icing Sugar

1 tsp Vanilla Extract

Instructions:

Refrigerate dough for 1 hour

Dish Size: 10″

1st bake with pie weights

230°C for 15 mins

2nd bake with egg wash

190°C for 10-15 mins or until golden

Refrigerate for 2 hours before serving
