170g Salted Butter

170g Fine Sugar

4 Large (330g) Bananas, mashed

3 Tbsp Yogurt

1/2 tsp Vanilla Extract

227g Plain Flour

1 tsp Baking Powder 1 tsp Baking Soda

Eggless Banana Cake by


1. Pre-heat oven to 165°C. Grease a 9″x5″ loaf pan. I made mine in 2 smaller loaf casings so it turned out abit low.

2. Sift flour, baking powder and baking soda and set aside.

3. Cream butter and sugar until light and fluffy. Add vanilla and yogurt.

4. Fold in mashed banana followed by the flour mixture.

5. Pour into pan and level it out. Top with walnuts if desired.

6. Bake for 50-60 minutes or until skewer comes out clean. Remove and cool on a wired rack completely before serving.
