120g Full Cream Milk, warmed

40g Fine Sugar

7g Yeast

280g Bread Flour

40g Melted Butter

1 Egg

1/2 tsp Salt

A pinch of Nutmeg (optional)


1. Combine milk, sugar and yeast in a bowl and allow the yeast to activate for 10 minutes.

2. Add flour to a mixer along with the yeast mixture. Add egg and melted butter. Start the mixer on low using the dough hook.

3. Add your salt and nutmeg and mix at speed 3 for 5 minutes.

4. Once dough is smooth and elastic, move it into a greased bowl and cover. Let it rise for 1 hour.

5. Dust your work surface and roll out your dough to half a cm thick. Cut your doughnuts and place them on a lightly floured tray.

6. Cover and rest for 30 mins.

7. Heat oil and cook your doughnuts on low flame until golden brown on both sides.

Glazed Dougnuts by

For the Glaze:

170g Icing Sugar

50g Melted Butter

4-8 Tbsp Milk


1. Combine all ingredients and add milk until you reach the desired glaze consistency.

2. Coat your doughnuts and place on a wired rack. Let the glaze set before serving.
