180g All-purpose Flour
150g Fine Sugar
1/4 tsp Baking Soda
1/4 tsp Salt
2 Eggs
120ml Buttermilk
115g Unsalted Butter, melted
2 tsp Lemon Zest, grated
1/2 tbsp Lemon Juice

Crumb Topping:
30g All-purpose Flour
50g Fine Sugar
55g Cold Butter, cubed

1. Preheat oven to 180°C and line 12 standard muffin holes or 16 Glazed muffin tray.

2. In a large bowl, combine the flour, sugar, baking soda and salt. In another bowl, combine the eggs, buttermilk, butter, lemon peel and juice.

3. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full.

4. In a small bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs. Sprinkle over batter.

5. Bake for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
