4 Large Bananas, mashed

100g Fine Sugar

1 Egg

75g Melted Butter

1/2 tsp Vanilla Extract

1 tsp Baking Soda

1 tsp Baking Powder

1/4 tsp Cinnamon Powder, optional

1/2 tsp Salt

240g Plain Flour


Chopped Walnuts, Pecans or Almonds

Moist Banana Muffins by


1. Pre-heat you oven to 180°C. And line 16 muffin liners.

2. Combined bananas, eggs, vanilla, sugar and melted butter in a bowl.

3. In a separate bowl, combine flour, baking powder, baking soda, salt and cinnamon.

4. Pour the dry ingredients to the wet and whisk until just combined. Scoop into the lined muffin tray and bake for 20-22 minutes.

5. Optional: Place chopped walnuts or pecan on the muffin batter before baking. Place them in a pile right in the center, as it will spread out as your muffins bake and expand.
