170g Salted Butter

170g Fine Sugar

2 Large Eggs

3 Large Bananas, mashed Bananas

2 Tbsp Yogurt

1/2 tsp Vanilla Extract

227g Plain Flour

1 tsp Baking Powder

1 tsp Baking Soda

1. Pre-heat oven to 165°C. Grease and line a 7×10″ pan or 8×8″ pan

2. Sift flour, baking powder and baking soda and set aside.

3. Cream butter and sugar until light and fluffy. Add one egg at a time. Add vanilla and yogurt.

4. Fold in mashed banana and flour mixture.

5. Pour into pan and level it out. Top with walnuts if desired. I used pecans here.

6. Bake for 50 minutes or until skewer comes out clean. Remove and cool on a wired rack.
