125g Unsalted Butter

Zest of 1 Lime

Zest of 1 Orange

200g Fine Sugar

3 Large Eggs

200g Self Raising Flour, sifted

125g Plain Yogurt


Juice of 1 Lime

Juice of 1 Orange

3 tbsp Sugar

Orange Lime Cake by


1. Preheat the oven to 175°C. Grease and flour an 8 inch ring pan, or grease and line an 8 inch square pan.

2. Place butter, lime and orange zest in a large mixing bowl and beat until light and fluffy.

3. Add sugar a little at a time, beating well after each addition.

4. Beat in eggs one at a time and mix well.

5. Fold in flour alternately with yogurt.

6. Pour mixture into the prepared pan. Bake at for 35mins or until skewer inserted comes out clean.

7. Around 10 minutes before end of baking time, prepare syrup. To make syrup place lime juice, orange juice and sugar in a saucepan. Cook over medium heat , stirring constantly until sugar dissolves. Bring mixture to a boil without stirring. And boil for 3 mins.

8. Remove cake from oven. Pour hot syrup over the cake. If using a cake stand or cake board, let the cake stand in tin for 5 mins, then turn out on a wire rack with tray underneath, before pouring the syrup. Set aside to cool.

*This a non-frosted cake though you can frost or glaze it if you like. Ideal for bite-size serving for buffets, or cut into wedges for teatime or snack. Enjoy!
