260g Plain Flour

1 tsp Baking Powder

2 tsp Baking Soda

60g Cocoa Powder

1 tsp Salt

300g Fine Sugar

200ml Hot Coffee (or 1 tsp Nescafe + Hot Water)

200ml Vegetable Oil

200ml Buttermilk (or 1 tbsp White Vinegar + Full Cream Milk)

2 Eggs

1 tsp Vanilla Extract

Cheese Layer:

250g Cream Cheese

60g Fine Sugar

1 Tbsp Lemon Juice

1 Tbsp Plain Flour

Chocolate Ganache

100g Dark Compound Chocolate

60g Heavy Cream

10g Butter

Steamed Chocolate Cheese Cake by


1. Preheat your steamer. Grease and line an 8″ square baking pan.

2. In a large bowl whisk together dry ingredients including sugar.

3. In a measuring jug, mix buttermilk, oil, eggs and vanilla extract. Pour into dry ingredients and mix thoroughly. Add hot coffee and mix until fully combined. Give it a good 2 minutes with a handmixer to make sure the crumbs are tight and cake won’t end up crumbly. Batter should be very runny.

4. Pour half or 670g of the cake batter into prepared pans. Cover with aluminium foil and steam for 20 minutes.

5. Combine all ingredients for the cheese layer and pour over the cake while it’s on the steamer. Steam for 10 minutes

6. Pour the remaining cake batter and steam for 40-45 minutes until a skewer inserted comes out clean.

7. Let the cake cool on a wire rack before unmoulding.

8. In a double boiler, combine ingredients for ganache and stir until melted. Pour over the cake and enjoy!
